Parchment Chicken

1/3 lb.boneless,skinless chicken breasts
MARINADE::1/2 tsp dry sherry
2 slices ginger root
3 scallions cut into 1-inch pieces
1/4 tsp salt
1 tsp soy sauce
1/2 tsp sugar
1 egg white.
10 egg roll wrappers
1 egg yolk beaten
oil for deep-frying


Slice chicken into thin strips.Combine marinade ingredients in a bowl;add chicken and mix well.Let stand 1 hour.Remove and discard ginger.Place wrappers on a flat surface with corners on top,bottom,left and right.Place 1 tbs chicken near bottom corner and spread it towards bottom corner.Fold corner over filling and roll up 1/3.Fold left and right corners over filling.Dab egg yolk on top corner,fold down and seal.Egg roll should resemble a small envelope.Deep-fry 2 to 3 at a time until golden brown,remove with a slotted spoon and drain on paper towel.Serve with your favorite dipping sauce.

Barbqued Ribs


1/3 cup hoisin sauce
1/3 cup ketchup
1/3 cup soy sauce
3 tablespoons sherry
3 cloves garlic, minced
4 pounds spareribs, in 2 racks
1/4 cup honey
A few drops red food coloring


Combine all ingredients except honey and marinate spareribs, refrigerated, 2 hours or over night. Preheat oven to 375 degrees. Arrange ribs on a rack over a roasting pan with water in the bottom to catch the drippings. Bake 45 minutes, turning frequently.
Brush both sides of ribs with honey and bake 10 minutes longer, turning once. (Ribs may be baked the day before, refrigerated, then cut apart and reheated in the oven for 10 minutes).Serves 4

BBQ Pork


2lb. pork tenderloin or bonless center cut roast
2tbs dry sherry
1/2tsp five spice powder
4 1/2tsp soy sauce
1 tbs sugar
2tbs hoisen sauce
1 tbs honey
dash red food coloring


Cut pork into 5"x2" strips,place in plastic bag.Combine marinade ingrediants in a small bowl;mix well.Pour over pork and let marinate at least 6 hours or overnite for more flavor in the refrigerator.Preheat oven to 350*.Fill a shallow roasting pan with water,place a roasting rack over the pan .Drain marinade from the pork ,reserving marinade.Mix honey with 3tbs reserved marinade in a bowl;set aside.Arrange pork strips on roasting rack,roast for 30 minutes.Baste pork strips with honey mixture.Rost 15 minutes and baste again.Roast 10 minutes longer until crisp and golden brown.Remove from oven and let cool.Cut pork strips diaginally into 1/4" slices.Serve warm or cold.Can be frozen for later use in other recipes.
