TOMATO BEEF CHOWMEIN
3/4 lb. flank steak sliced thin accross the grain.
Meat Marinade:
2tsp cornstarch-
2 tsp light soy sauce-
1tsp sherry.
1 onion,cut into thin wedges
2 stalks celery,cut into thin slices-2 tomatoes,cut into wedges
1 tbs brown sugar
 3/4tsp salt
SAUCE MIXTURE;1tbs cornstarch
4tbs catsup
3/4 cup chicken broth
1tbs oyster sauce
3tbs oil
3/4 lb. egg noodles or spagetti 
 
Cook noodles as per directions.Rinse with cold water ,drain.Line a cookie sheet with aliminum foil and rub with 1tbs oil.Arrange noodles in a thin layer on the cookie sheet.Cook in a preheated 400* oven for 20 minutes,turn over and brown for 10 minutes more.Cool and then break into small pieces.Mix sauce ingrediants set aside.Ssrinkle tomatoes with brown sugar.
Heat wok.Add 1tbs oil stir-fry onions and celery 2 minutes,add a little salt and saugar to taste.Remove and set aside.Heat 2tbns oil,stir-fry beef until browned;add tomatos to heat through,remove ,set aside.Stir in sauce mixture and boil till it thickens.Add noodles and mix till they are soft.Add back all the other ingrediants stir to coat and serve.Makes 4 servings.

Beef with Oyster Sauce
 
INGREDIANTS:
1LB flank steak or other tender beef
Marinade:
1tb oyster sauce
1tb soy sauce
1tsp sugar
1tb cornstarch
2tb vegtable oil
Seasoning sauce:
2tb oyster sauce
3tb water
1/2tsp sugar
1/4tsp salt
1tb soy sauce
1tb cornstarch
3tb chiken broth
3/4lb brocoli cut in small pieces
2 cups boiling water
2tb oil
1-1/2tsp dry sherry
1/4tsp salt
1/2tsp sugar
5 slices ginger root

Cut beef across the grain at an angle into thin strips.Cut
strips 2 inches long.Combine marinade in medium bowl.Add
beef strips,mix well,let stand 20 minutes.Combine seasoning
sauce,set aside.Parboil broccoli 10 secondsH.heat oil in wok stir fry ginger 30 seconds remove.Add beef stir fry till browned.Add broccoli,wine,salt and suger stir fry 1
minute.Add seasoning sauce and stir till it thickens.Serve over rice.
MAKES 4-5 SERVINGS

Beef with Broccoli
2/3 lb.flank steak-1/2 lb broccoli tops cut into 2 or 3 pieces each-1 tsp cornstarch-1/3 cup water-7 tbs oil-1 clove garlic crushed-1 tsp salt-1/2 tsp soy sauce-3 tbs chicken broth-1/4 tsp pepper
MARINADE::1 tsp dry sherry-1/2 tsp baking soda-1 tbs soy sauce-1 tsp cornstarch-1 tbs sesame oil-1/4 tsp sugar
Cut beef across the grain at an angle into thin strips.Mix the marinade ingrediants in a bowl ,stir to blend well.Add beef strips,mix well and let stand 30 minutes.Disolve cornstarch in water to make a paste;set aside.Heat 6 tbs oil in wok over high heat 1 minute.Stir-fry beef until browned;remove beef draining well over the wok.Add 1 tsp oil to oil remaining in the wok.Heat 30 seconds;add garlic stir-fry 30 seconds.Add broccoliand stir-fry 5 minutes.Add constarch paste,salt,soy sauce,chicken broth and pepper.Stir-fry until sauce slightly thickens.Add cooked beef:mix well to coat

Beef and Peppers with Oyster Sauce
Ingredients

1lb sirloin steak, trimmed
1 tbsp cornstarch
1 tsp sugar
2 tbsp light soy sauce
1 tbspdry sherry
2 tbsp oil
1 tsp chopped fresh ginger
1 tsp chopped garlic
1 red pepper, sliced
1 yellow pepper, sliced
1 bunch of scallions, cut into short lengths
2-3 tbsp oyster sauce
1 tsp sesame oil

Method

Trim the sirloin and cut into fine strips and place in a bowl. Add the cornstarch, sugar, soy sauce and sherry
Mix well and leave to marinate for about 10 minutes.

Heat the oil in a wok or large frying pan until very hot. Add the ginger and garlic and fry until fragrant. Add
the beef and stir fry for 2 minutes.

Add the peppers and scallions and stir fry for a further 2-3 minutes. You may need to add a splash of
water. Lastly add the oyster sauce and sesame oil and mix well.

Spicy Beef and Bok Choy
1lb. boneless beef sirloin steak
1/4 cup soy sauce
2 tbs.dry sherry
2 tsp. minced ginger
2 cloves garlic, minced
1 teaspoon sugar
1/2 tsp. Chinese five-spice powder
1/4 ttsp. red pepper flakes (optional)
1 Lg. head bok choy
2 tsp. cornstarch
2 tbs. oil, divided

Trim fat from beef; discard. Cut beef across grain into 1/8-inch-thick slices; cut each slice into 2-inch pieces. Combine soy sauce, sherry, ginger, garlic, sugar, five-spice powder and red pepper flakes in medium bowl. Add beef and toss to coat; set aside.
Separate bok choy leaves from stems. Stack leaves and cut crosswise into 1-inch slices. Cut stems diagonally into 1/2-inch slices. Keep leaves and stems separate.
Drain beef, reserving marinade. Stir reserved marinade into cornstarch in small bowl; stir until smooth. Set aside.
Heat wok over medium-high heat 1 minute . Add 1 tablespoon oil into wok and heat 30 seconds. Add beef; stir-fry 2 minutes or until beef is barely pink in center. Remove beef to large bowl.
Add remaining 1 tablespoon oil and heat 30 seconds. Add bok choy stems; stir-fry 3 minutes. Add bok choy leaves; stir-fry 2 minutes.
Stir marinade mixture until smooth; add to wok. Stir-fry 1 minute or until sauce boils and thickens.
Return beef and any accumulated juices to wok; cook until heated through.
HUNAN BEEF
1 lb. flank steak
21/2 tbsp. oil
1 tbsp. finely chopped garlic
1 tbsp. finely chopped ginger
2 scallions, slivered
1 tbsp. hoisin sauce
1/2 tsp. chili paste with garlic
Marinade:
1/2 tsp. baking soda
1 tsp. warm water
1/2 tsp. salt
1/2 tsp. sugar
2 tsp. dark soy sauce
1 tsp. lite soy sauce
1 tbsp. oyster sauce
11/2 tbsp. cornstarch 1 tbsp.
1 tbsp. sesame oil
11/2 tbsp. dry sherry
1 egg white
Cut flank steak lengthwise (with grain of meat) into 3 equal strips each approximately 1 1/2" wide. Cut each strip across the grain into thin slices. Place in a bowl. To make the marinade, mix baking soda with warm water and add to the meat. Add the remaining marinade ingredients and mix well. Marinate for at least 5 hours, or as long as overnight in the refrigerator.Heat wok and add oil. Add garlic and ginger and stir-fry for 30 seconds over high heat. Add beef and stir-fry for 3-5 minutes over high heat. Add green onions, hoisin sauce, and chili paste. Stir well and serve.Serves 4
