SWEET AND SOUR SAUCE

1tbs oil-1 clove garlic crushed-2/3 cup sugar-1/4 cup catsup-1/2 cup cider vivegar-2tbs light soy sauce-1/3 cup water-2tbs cornstarch desolved in 1/3 cup water
Heat oil in saucepan over medium heat.Brown and discard the garlic.Combine the sugar,catsup,vinegar,soy sauce and 1/3 cup water.Pour into pan and stir constantly till smooth and comes to a boil.Add the cornstarch slurry and stir till the sauce thickens.Keep warm on low heat until ready to use.


GINGER SAUCE:5 slices fresh ginger root-3tbs soy sauce-1tbs rice or white vinegar-1/4tsp sugar
Mince ginger root.Combine all ingrediants in a small bowl until blended.Let stand 5-10 minutes before serving.Makes 1/4 cup.

Hoisin Dipping Sauce

2 tablespoons hoisin sauce
2 tablespoons tomato catsup
1 teaspoon rice vinegar
1 teaspoon honey
1 teaspoon black soy sauce
Put all ingredients in a medium bowel and stir to blend.

Spicy Soy Dipping Sauce
1/4 cup chicken broth
1/2 cup light soy sauce
1 tablespoon rice wine or dry sherry
2 tablespoons sesame oil
2 tablespoons rice vinegar
1 tablespoon sugar
1 teaspoon hot oil

Combine the ingredients in a small boil. Stir to dissolve the sugar, then cover and refrigerate until ready to serve.

SESAME SOY DIP
1/4 cup light soy sauce-2tsp sesame oil-2tbs rice or white vinegar
Combine all ingrediants in a small bowl;mix well.Makes 1/4 cup

PEACH DIPPING SAUCE
1/2 cup peach preserves
1/2 cup cider vinegar
1 tablespoon catsup
1 tablespoon soy sauce
1 tablespoon cornstarch
2 tablespoons cold water

Combine peah perserves,vinegar,catsup,soy sauce in a sauce pan;bring to a boil, stirring occasionally.
Blend cornstarch and cold water;add to hot mixture,stirring till thickened.makes 1 cup

Duck Sauce
Mandarin
This delicious sauce is served with Peking Duck, and Mu Shu Pork.
3 tablespoons sweet bean sauce
3 tablespoons hoisin sauce
1 tablespoon sesame oil
1 teaspoon sugar
Mix bean sauce, hoisin sauce, sugar and sesame oil in a small bowl until smooth. Serve at room temperature. Makes about 1/2 cup.

Garlic Sauce

Ingredients

2 tb of peanut oil
2 tb of minced garlic
3 tb of oyster sauce
a little fresh ginger grated if you; wish
1/2 c chicken stock or canned broth

Instructions

Heat wok or deep pan over high heat until it is hot. Add oil and wait
until it is smoking, add ginger and garlic and leave for a minute or so.
Then add the oyster sauce and stock simmering for another few minutes.
Pour over your favorite fried rice, white rice or meat, especially
chicken.


SPECIAL EGG FOO YUNG SAUCE


1/2 cup Soup stock, chicken
1/2 tsp. Sugar
2 tsp. Soy sauce
1/4 tsp. Sesame oil
1 1/2 tsp. Cornstarch in 1/4 cup cold water

Mix cornstarch in water. Mix all ingredients together. Bring sauce to a boil to thicken.
Increase the cornstarch slighly for a thicker sauce.
